Hillick and Hobbs is the Finger Lakes project of Paul Hobbs, whose consulting work at Opus One, Catena Zapata, and dozens of other estates has made him one of the most recognized names in international winemaking. The Seneca Lake estate focuses exclusively on Riesling, which Hobbs identified as the variety that most completely expresses the east-shore terroir he found when he scouted the region. The result is a wine program with a clear point of view and an international benchmark in mind. Reservation-preferred. Don't miss the single-vineyard program: tasting across the different site designations in one visit is one of the clearest arguments for why aspect and soil variation on the east shore produce meaningfully different Rieslings from adjacent properties.
