Tom Higgins was a practicing physician when he and Susan planted their first vines on the east shore outside Union Springs, NY. The single estate produces Riesling and Pinot Noir from shale slopes with direct lake exposure, farmed with the specificity that comes from knowing every row personally. Production is deliberately small — under 2,000 cases annually. Heart & Hands runs on appointments, meaning you are likely to be in conversation with the people who made the wine rather than waiting for a pour. The estate has become one of the reference producers on the east-shore Cayuga Lake Wine Trail for the same reason the best small-production estates anywhere become reference points: the site is exceptional and the winemaking gets out of its way. Reserve a tasting before you drive.
