Birds Eye Hollow began as a maple syrup farm, tapping sugar maples on the hillside above Hammondsport and producing small-batch syrup from a sugar shack that is still on the property. The distillery came later, and the sequencing matters: the maple is infused directly into the Maple Bourbon and Maple Rye Whiskey during production, not added as a modifier afterward. The tasting room occupies a former hunting cabin with a log bar; the tool marks are still visible in the walls where equipment was once hung. The spirits lineup also includes gin, a basil-infused vodka, and a lavender-infused vodka sourced from Lavender Crest Farms. Cocktails on the menu pull from local producers including Pleasant Valley Wine Company. Outdoor deck, dog-friendly, live music on weekends in season. Sunday pancake breakfasts run from the sugar shack through the spring.
